This is how we’re doing Tuesday morning… a tall stack of flap jacks (with little dippers, of course) and a big pot of coffee.
Our whole family (including little J!) enjoys this Banana Oat Blender Pancakes recipe.
We eat them because 1.) they’re yummy and 2.) they’re quick and easy to whip up, BUT added pluses are that they’re gluten free, sugar free (other than the copious amounts of pure maple syrup that I highly recommend you drown it in later), and dairy free (if you use almond milk).
Banana Oat Blender Pancakes
(adapted from Mountain Mama Cooks)
• 2 cups oats
• 1 1/4 cups milk
• 1 large ripe banana
• 1/2 teaspoon cinnamon
• 1 teaspoon vanilla
• 1 1/2 teaspoons baking powder
• 1 egg
In a blender, combine everything except the egg and blend well. Add the egg and pulse until combined. Cook on a heated skillet (we vote cast iron!), and serve smeared with butter and doused in pure maple syrup. (Or dunked in syrup. E is a big fan of the dunking method.)
IF there are any leftovers, take them along for a snack while running errands. For you or the kids. I won’t judge.
